Michelle’s warming winter recipe is so easy and delicious you’ll wonder why you haven’t tried it before. With just the right amount of spice, this Thai sweet potato soup, will have you feeling toasty from the inside out.

Thai Sweet Potato Soup

Ingredients

600g Pumpkin diced
600g Sweet potato diced
1 tablespoon butter
2 tablespoons ginger grated
1 tablespoon garlic grated
1 large brown onion diced
1 tablespoon red curry paste
1 litre of chicken stock
400ml cream

Method

  1. Cook ginger, garlic and onion in butter until tender add red curry paste.
  2. Add chicken stock, pumpkin, sweet potato and cook approximately half an hour or until tender
  3. Puree and add cream.
