Thai Sweet Potato Soup
600g Pumpkin diced
600g Sweet potato diced
1 tablespoon butter
2 tablespoons ginger grated
1 tablespoon garlic grated
1 large brown onion diced
1 tablespoon red curry paste
1 litre of chicken stock
- Cook ginger, garlic and onion in butter until tender add red curry paste.
- Add chicken stock, pumpkin, sweet potato and cook approximately half an hour or until tender
- Puree and add cream.
